haii .. today is our second day of practice this week, and
as usual I will tell you about my activities in the kitchen today. as usual, we
went in at 08.00 so I went to college before 8 o'clock after arriving I went
straight to the kitchen and went straight one line because chef dhino had not
arrived we listened to the direction of our supervisor, afterwards we headed to
our respective section to prepare the food to be served . list of menus to be
presented today:
- Chicken Salad Hawaian (appetizer)
Appetizer - Shrimp Bisque (soup)
Soup - Beef Stew (main course)
- Bake of Potato (main course)
- Zucchini Saute Provencale (main course)
Main Course - Butter Cake (dessert)
Dessert - French Bread
our group got a dessert section so we handled the butter
cake and french bread we had made yesterday. butter cake we made yesterday we
frosting it, then decorate it. after that cut into a few pieces and stored in
the chiller. at 11:25 resto open all the menu in plating then brought to the
restaurant according to order. because the dessert menu came out last, so I
helped another section. at 01:15 resto closed and we clean our section then one
line to get directions from chef dhino about the menu tomorrow. my group got
the main course part which consisted of menu:
- fillet of meunier snapper
- potatoes au gratin
- glazed root vegetables
so we prepared what we can prepare today such as cleaning
the fish then marinet with lemon, cut carrots and turnips into blocks and then
soaked and put in chiller, boil potatoes then peeled and stored in chiller. the
rest, tomorrow will be prepare tomorrow because the material that has not been
there and also bechamel can not be made because bechamel sauce can not stand 1
day so tomorrow can be made.
after we prepare we clean the work area of each of them
then direct general cleaning about at 16:35 and finish at 17:45 after the
general cleaning we take a break while waiting for our friend finished praying
after that we are online to listen to some direction from senior after that we
pray and go home.
