hai guys, this is our third day of practice in this week,
today is really a tiring day, starting from preparing menu to be served later
when open restaurant, prepare all ingredients that will be used tomorrow. such
as days ago in this week we went in at 7, we oneline for attendance, grooming
inspection and completeness of the tool but I was a little late because of
rain, after oneline, we are directly divided into two parts, some groups do
running restaurant and some groups others do prepare for tomorrow.
the first thing I do is take the beef and chicken meat in
the freezer fortunately in melted then after that I memoong chicken meat into 4
large parts and also cut the small dice beef meat to make satay after that I
helped do peel spice to make chili for the meat of the chicken afterwards in
blender then mixed with chicken pieces then rested in chiller, at 12.20 resto
closed and all the preparation activities are temporarily replaced for oneline
and listening to some guidance from chef dhino regarding the group division to
prepare because there is an additional menu that will made tomorrow.
my group got a part to prepare fried egg noodles with
vegetable, danish and croisant but the ingredients for fried egg noodles were
all ready so we would just make a danish and a croissant.
ingridients that we need to make danish:
- milk
- yeast
- butter
- sugar
- salt
- eggs
- egg yolk
- hard flour
- soft flour
- croissant fat
- dissolve yeast in milk
- mix butter,sugar, salt until smooth
- add liquid milk with tyeast mix it little by litle until get the goog texture
- then enter the croissant fat then fold with the single fold and after that roll then res in chiller, do it 3 times
- after that bake it until collor change to brown
after all prepare finished chef dhino show how to make fried
rice and fried noodles to be made tomorrow, after we finish general cleaning
until 17:45 and we take a rest while waiting for chef ical and after that we
are oneline to listen to some delivery from pa ical. after that we pray and go
home
