day we practical, and like usually i will tell you my activity on kitchen
Poltekpar Makassar.
Today we make
main course is Gai Tod Takrai, Yam Makeua Yo, and Khau Plao. And yesterday
we've ready to prepare, and then we ready to open restaurant.
And then we get a
order and we ready to plating, after that is closed order and we ready to
general cleaning, and we finish then oneline front of kitchen and go home.
I will share about what i make today, the recipe is : GAI
TOD TAKRAI, YAM MAKEU AYO, AND KHAU PLAO
GAI TOD TAKRAI
2 stalks fresh lemongrass
450 gr chicken
3 cloves garlic
1/4 tsp ground blackpepper
1/2 tsp ground thai chilli
2 tbsp palm sugar
1 tsp salt
2 tbsp thai fish saucr
4 tbsp peanut oil
YAM MAKEUA YAO
4 pcs eggplant
10 thai chillies
To taste lime juice
2 tsp fish sauce
2 tsp sugar
2 shallot
150 gr shrimp
1 pcs hard boiled egg
As needed small handful of short cilantro spring
KHAU PLAO
375 gr rice
750 ml boiling water
